The Harsh Reality of Canning...

I thought after several posts about the canning I've been doing, I'd post about the "darker side" of the whole thing. My house looks like a farm stand. To have pizza for dinner last night involved stacking all of this produce on every flat surface I could find...

Ah... the sight of 15 jars of homemade salsa... oh. 15 jars of salsa- On the counter to cool. When I only have about 6 ft of counter to work with.

Then there's the lids, and rings, and tools and spices... and vinegar... GALLONS of vinegar...

Everywhere there are buckets and bowls of SOMETHINGS. I feel blessed for the bounty, but it's a little alarming sometimes...

Jars. Lots and LOTS of jars... There's more on the front porch. Really.

It's a whole different ballgame when you get veggies by the 5 gallon bucket! This is my SECOND batch of cukes. Don't be surprised when you get pickles for Christmas, people! Pickles and Salsa, that's Christmas-y right? Red and Green?? EH?


But, oh my gosh, aren't these the most beautiful tomatoes you've ever seen?? This is what 18 LBS of tomatoes looks like. These are what made my salsa. Makes you want some, doesn't it??
